Update to CAB’s Chili

So what do I do when I love the Local Kine style chili but the Mister prefers my original recipe? Create something somewhere down the middle. And the results was pretty darn good. It had the flavors and the consistency that I love of the local kine but still have the punch and flavor that the Mister loves of the other kine. So here’s what I did. I used all the ingredients from the original recipe with the inclusion of the following: increased the amount of tomato paste to half a can (3 oz), diced 3 slices of bacon, 3 dashes of Worcestershire sauce (which I started adding to the original recipe at some point), increased paprika to 1 tablespoon.

I brown the bacon on medium heat, until crisp. Removed it from the pan and set aside. Then I sautéed the onions and mushroom in the bacon fat. Added the tomato paste and cooked it with the mushroom and onion for about 1 minute, until very fragrant. Followed the original recipe up through Step 2 and adding Worcestershire sauce and the bacon bits. Reduced the simmering to 30 minutes. Steps 3 and 4 are unchanged.

I have to say that I like this version the best of all 3. The Mister is holding out his final decision until he has a bowl of leftover chili. Which can only mean that he’s having a hard time deciding between the original and the updated version!
